7:05 PM, a restaurant bar in West Palm, two coworkers waiting on a table before a colleague's birthday night. A woman we'll call Renata, 36, orders the salmon. Her coworker — a man we'll call Toby, 29 — waves off food entirely: "Eating's cheating. Empty stomach, cheaper night. Basic economics." Renata, cutting into the salmon: "You've invented expensive economics. Ask your Sunday." Toby's Sunday, spoiler, will have opinions. But the interesting part is why — because the folk rule Renata is following has an actual valve behind it.
The valve
Alcohol's absorption story is a tale of two organs: the stomach, where absorption runs slow, and the small intestine, where it runs fast — and between them sits the pyloric valve, the gatekeeper. On Toby's empty stomach, the gate stands open: drinks pour straight through to the fast-absorption zone, blood alcohol spikes hard, and the liver — which processes at a fixed hourly rate regardless of arrival speed — falls behind, letting acetaldehyde pile up. The champions are fat and protein — they hold the gate longest, which is why the steak-or-salmon dinner is engineering wearing indulgence's clothes. Fiber assists. What the dinner can't do
Honesty about the ceiling: the base layer flattens the curve — it doesn't delete the area under it. Total alcohol still gets processed, the diuresis still runs its export business, and a big enough count defeats any salmon. It's layer one of the full stack — water alternation, congener awareness, an honest count — and when the night outruns the whole stack anyway, the county's morning-after infrastructure stands ready.
